儒 is the scholar — courtesy, and the way one carries oneself. 家 is the house, the family. Together they name the Confucian school — and, far more simply, they say home.
That is how the restaurant introduces itself: gentle, in the manner of Confucian culture. Cooking that isn't softened to be understood, served in a contemporary room a few steps from Paolo Sarpi.
